INGREDIENTS
Gumbo
1 cup of chopped green peppers
2 medium sweet onions chopped
3 green onions chopped
2 cups of chopped celery
1 large can of crushed tomatoes
1 teaspoon of chili powder
1 teaspoon of salt
1 bag of soy curls (8 oz) – Available on Amazon
4 garlic cloves cut in half and smashed
2 cups of fresh parsley chopped
1 tablespoon of hot sauce
1 tablespoon of flour (white, oat or wheat)
1 tablespoon of sweet basil
1 tablespoon of oregano
1/2 Tablespoon of OLD BAY Seasoning
1 quart of veggie broth
“Shrimp”
1 bag of soy curls (8 oz) – available on Amazon
1 tablespoon of OLD BAY Seasoning
2 quarts of veggie broth (making a total of 3 quarts for entire recipe)
Rice
3 cups of cooked brown rice
DIRECTIONS
BROWN RICE
Make brown rice and set aside
“SHRIMP”
Bring 2 quarts of vegetable broth to a boil then add 1 tablespoon of OLD BAY Seasoning and mix. Add Soy Curls, turn off heat and aside for 30 minutes.
GUMBO –
In large pot, sauté (with water) green peppers, onion, green onions, celery.
After sautéed add all ingredients including the soy curls and broth from soaking. Do not add the brown rice. Simmer covered for 30-45 minutes.
Just prior to serving, add brown rice with gumbo or as a side with gumbo and garnish with green onions.
