Green Onion Hummus

Very good for chips, baked potatoes or a sandwich spread
Improvised from The Prevent and Reverse Heart Disease Cookbook

Ingredients

1 (15 Ounce) can of chickpeas drained and rinsed (save 1/4th cup of the aquafaba liquid
1/4th cup of aquafaba liquid
2 large garlic cloves
3 tablespoons of fresh lemon juice
3 tablespoons of Dijon mustard
1/4th teaspoon of black pepper
1/4th teaspoon of salt – optional
1 cup of chopped green onions (4-5)
1 cup of spinach
Zest of lemon

Instructions

Put all the ingredients in a blender and blend for 90 seconds to 2 minutes
Store in the refrigerator for 5-7 days.
