When it comes to what’s truly healthy to eat, the topic can sometimes be as tumultuous as a summer storm. Confusing and overwhelming as well! Let me simplify my message: Incorporate as many whole plants into your eating pattern. Most people would agree that the fewer processed foods we consume and the more plants we eat, the healthier we will be. But where to begin? In my pursuit of better health, will I need to eat salad for the rest of my life? Not even close! In this light-hearted blog, we’ll explore the mouthwatering variety of foods that a WFPB lifestyle offers, including beans, nuts, seeds, fruits, and veggies. Get ready to savor the flavors while shedding some pounds because WFPB eating is about to captivate your taste buds and bring out the best in you! When I started my plant-based journey in 2017, I had no idea of what to eat. I was very confused and honestly struggled a bit in the beginning. I thought I was supposed to eat salad several times a day and I did. This caught up with me in a not so good way. Cramping (and “other” challenges) ensued!! TMI! TMI! It’s all good. Eventually, I was able to figure it out. Lol.
In the beginning, I only knew how to cook toast. Today, I am a little better in the kitchen but I emphasize both in my cooking and to many of my clients to start with a mindset of KEEPING IT SIMPLE. Case in point: This weekend, I put together a recipe which I is categorized as a Quadruple Whammy! – See pic above. #1 Taste great #2 Healthy WFPB meal #3 Easy to make #4 Inexpensive.
