“Chicken” Noodle – With Soy Curls!

INGREDIENTS

1 large onion diced

1 teaspoon of minced garlic

Celery 3 stalks cut in small pieces

Carrots 3 cut in small pieces

Dried parsley 1 teaspoon

Thyme 1 teaspoon

Bay leaf 1

Cracked pepper

Soy sauce or Tamari sauce 2 Tablespoons

Vegetable stock/broth in Three 32 oz containers (no/low sodium)

Butler Soy curls – one 8 oz package

Thai rice noodles- 1/2 box

DESCRIPTION

Delicious Healthy WFPB meal that taste just like Chicken Noodle Soup! YUM!

DIRECTIONS

Break soy curls into small pieces (about 1 inch).
Bring one 32 oz. of no/low sodium veggie broth/stock to a boil. Once boiling, turn of heat and add soy curls and let sit for 30 minutes.
While this is soaking, sauté onion for 5-7 minutes then add minced garlic and sauté for a couple more minutes. Chop carrots, celery.
After curls soaking for 30 minutes, add all ingredients to large pot and bring to a boil. Simmer for 30 minutes then serve.
