Fast Black Bean Chili

INGREDIENTS

3 Cans Black Beans drained and rinsed (save the liquid- set aside)

Frozen Corn 12 to 16 oz.

Salsa 8-12 oz

Ground Cumin 1/2 Teaspoon

Chili Powder 2 Teaspoons

Black Pepper 1 teaspoon

Squeeze of fresh Lime Juice (optional)

Cilantro 1/4th cup Chopped (optional)

DESCRIPTION

THIS IS FAST CHILI! Start to finish was 30 minutes! You can have this as chili, a dip or add to a flour or corn tortilla. Very tasty, very simple and healthy!

DIRECTIONS

Mix the drained beans, corn, salsa, cumin, chili powder and pepper in a pot. Add enough of the saved liquid to allow for the chili consistency that you desire. Bring to a boil and then simmer covered for 20 minutes on low heat. Add lime juice and cilantro just prior to serving if desired.
